Spicy Pork Spare Ribs

INGREDIENTS:2 lbs pork spareribs
MARINADE:
1 tsp sugar
1 tbsp dry sherry
REMAINING INGREDIENTS:
1 tsp black peppercorns
2 tbs sea salt
1/2 tsp chinese five-spice powder
1 1/2 tbsp cornstarch
oil for deep frying
DIRECTIONS1) Chop spareribs into 2 inch pieces. Place in a large bowl and set aside.
2) Heat a wok to medium heat and add the peppercorns and salt. Dry fry for about 3 minutes or until the mixture colors slightly. Remove from heat and stir in the five-spice. Set aside and let cool. Once cool, grind the mixture into a fine powder with a mortar and pestle.
3) Sprinkle a tsp of the spice mix over the ribs and rub into the meat. Add the marinade and mix well, coating the ribs evenly. Marinade for 2 hours.
4) Drain out the excess marinade and sprinkle the ribs with the remaining spice powder. Mix well.
5) Heat oil for deep frying.
6) Before frying the ribs, sprinkle cornstarch over the ribs. This will make the meat crispy on the outside. Deep fry for about 5 minutes until the meat is crisp and cooked thoroughly.
Serve with jasmine rice. Enjoy!
